Smoked salmon open sandwich

For the perfect summer light bite, try this super quick recipe for smoked salmon open sandwiches - featuring smoked salmon from Grimsby's Alfred Enderby.

Serves: 4

Ready in: 5 minutes

INGREDIENTS

  • 2 tbsp extra virgin olive oil
  • Zest and juice of ½ lemon 2 tsp capers, chopped (optional)
  • 1 small shallot, or 2 spring onions, peeled and finely chopped
  • 2 tsp chives, chopped (optional)
  • 2 ripe avocados, peeled and sliced into half moons
  • 4 slices Gadsby’s bread of your choice, toasted 200g Alfred Enderby smoked salmon
  • Watercress and cherry tomatoes, to serve

METHOD

1. Gently whisk together the extra virgin olive oil, lemon zest and juice, capers, shallot or spring onions, and chives, if using, to make a dressing.

2. Divide the avocado between the bread and top with the salmon.

3. Drizzle some dressing over each sandwich and serve with a salad of watercress and cherry tomatoes.
