Wine-braised red cabbage (V)

It's beginning to look a lot like Christmas and this recipe takes red cabbage to a whole new level adding a hint of festive spice.


SERVES 6 TAKES 1 hour 20 mins

Ingredients:

1 tbsp Ownsworth’s Rapeseed Oil

1 red onion, peeled and sliced

1 tbsp fresh ginger, peeled and finely grated

1 clove garlic, peeled and finely grated

1 small red cabbage (about 700g), shredded

1 cinnamon stick (optional)

200ml red wine

3 tbsp malt vinegar

75g brown sugar

Method:

1. Heat the oil in a large pan and cook the onion over a medium heat for 5 minutes.

2. Add the ginger and garlic and cook for 1 minute. Add the rest of the ingredients and bring just to the boil, then cover the pan with a lid, turn down to a simmer and cook for 40 minutes to 1 hour, stirring occasionally, until the cabbage is softened. Season to taste.
