Strawberry, mint and elderflower fizz

A refreshing drink to enjoy while watching the tennis - perfect with or without the booze!

Ingredients:

A punnet of Co-op British strawberries - plus some to garnish

15 mint leaves - plus some to garnish

100ml vodka (replace with sparkling water for a non-alcoholic version)

600ml Belvoir Edlderflower Pressé

Method:

1. Cut the tops of the strawberries and blend with the mint into a purée using a high-speed blender or food processor - make sure you leave a couple of strawberries and mint for decoration at the end.

2. Mix the strawberry and mint purée in to a large jug with the vodka and Belvoir Elderflower Pressé.

3. Garnish with the leftover strawberries and mint, then serve.

TIP: You could always swap the vodka for gin and some cucumber - it's equally as delicious!
