Brighten up a rainy day with this vibrant Eton Mess.
Serves 4 ready in 10 Minutes
Ingredients:
2tbsp of Belvoir Elderflower Cordial
150g of Co-operative blueberries
150g of Co-operative raspberries
300ml of Co-operative double cream
Pack of 8 Co-operative meringue nests
Method:
1. Combine 150g of Co-operative blueberries to 150g of Co-operative raspberries, then add two tablespoons of Belvoir Elderflower Cordial.
2. Whip the double cream, and then crumble in six of the meringue nests.
3. Fold in the fruit and spoon in to four glasses.
4. Crumble in the 2 remaining nests over the top and serve.
