The summer holidays are here! We've got some easy to make ideas on what you can have for your lunch each day!

Egg Mayonnaise Pitta's 

Ready in 20mins. Serves: 1. 

What you'll need: 

  • 1 wholemeal pitta
  • 1 egg
  • 1 tablespoon of reduced-fat mayonnaise
  • 1 spring onion

What to do: 

  1. Put your egg in a small saucepan, with the shell still on, and cover it with water.  Bring it to the boil and cook for 10 minutes. 
  2. Once you're egg has cooked, put it straight into a bowl of cold water and leave to cool - be careful when taking your egg out of the saucepan as it'll be hot. 
  3. When you're egg is cold, peel off the shell and mash the egg together with the mayonnaise. 
  4. Open up your pitta bread and fill it with the egg and mayonnaise mix
  5. Chop up some spring onions into small slices and add them to your pitta mix. 


Scrambled Egg Pittas

Jar Noodles

Ready in 15 mins. Serves 1. Vegetarian and low in saturated fat. 

What you'll need: 

  • 1/2 tablespoon of vegetable oil
  • 100g Co-op Chestnut Mushrooms, thinly sliced
  • 2 spring onions, sliced
  • 5cm ginger, grated
  • 1 red chilli, de-seeded and finely chopped 
  • 50g frozen peas
  • 2 teaspoons Co-op Light Soy Sauce
  • 1/2 tablespoon toasted sesame oil 
  • 1 teaspoon cornflour
  • 1/2 pack Co-op fresh egg noodles
  • 1 small carrott, peeled into ribbons
  • 2 tablespoons o coriander

What to do: 

  1. Heat the oil in a nonstick pan and cook the mushrooms over a high heat for 5 mins or until golden
  2. Stir in the spring onions, ginger and chilli
  3. Then cook for 1 minute until fragrant
  4. Stir in the peas and remove from the heat
  5. In a large jar, mix the soy, sesame oil and cornflour, before spooning in the noodles and topping with the cooked mushrooms mixture and carrot
  6. To serve, add 300ml just boiled water, stir well, cover loosely then leave for 2-3 mins before topping with the coriander
Jar Noodles

Philadelphia and tomato bagel

Ready in 5 mins. Serves 1. 

What you'll need: 

  • 30g Philadelphia Original
  • 10 cherry tomatoes, assorted colours
  • 1 teaspoon olive oil
  • Cracked black peper
  • 1-2 sprigs fresh mint leaves (optional)
  • 1 wholemeal bagel
  • 1 handful of baby leaf salad (to serve)
  • 1 teaspoon olive oil (to serve)

What to do: 

  1. Cut the cherry tomatoes in half and place in a small bowl. Toss with 1 teaspoon of olive oil, season to taste and then set aside until ready to use
  2. Cut the bagel in half and spread both sides with Philadelphia Original. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint
  3. Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil, a squeeze of fresh lemon and some seasoning, if you like
