Sour lemon and berry vodka slushies (VE) (GF)

Add a grown up twist to your slushies with a splash of vodka and a squeeze of sour lemon.

INGREDIENTS

  • Juice of 4 Co-op lemons
  • 75g Fairtrade caster sugar
  • 170g Co-op blueberries
  • 50g Co-op blackberries
  • 250g Co-op British raspberries
  • 100ml Co-op Irresistible premium vodka
  • Crushed ice
  • 330ml can Co-op diet lemonade
  • Wooden skewers and fruit of your choice, to decorate

METHOD

  1. To make the lemon syrup, put the lemon juice, sugar and 50ml water in a small pan over a medium heat and bring to the boil.
  2. Allow to simmer for a few minutes until the sugar has dissolved, then leave to cool, off the heat.
  3. Blitz the blueberries and blackberries into a purée with a stick blender, then sieve
  4. Repeat the process with the raspberries.
  5. To serve, divide the vodka, lemon syrup and the blueberry and blackberry purée between four highball glasses.
  6. Half-fill each glass with crushed ice, then divide the raspberry purée between them.
  7. Fill with more ice and top with a splash of lemonade, then decorate with the extra fruit threaded onto wooden skewers.
