Rarebit roasties

Fancy a twist on your normal roast tates this Christmas dinner? Our spud-tacular rarebit roasties with Love Local ingredients hit the spot. Cheese? Beer? Potatoes? Go on, treat yo’elf !

SERVES 4. PREP 15 MINS. COOK 1 HR 20 MINS

INGRIEDIENTS

2 tbsp sunflower oil

1kg large white potatoes, peeled

120g Just Jane Mature Cheddar

50ml Bateman’s Triple XB beer

1⁄2 tbsp Worcestershire sauce

1 tsp English mustard

1 Love Local egg yolk

METHOD

1 Preheat the oven to 200oC/fan 180oC/Gas 6. Add the oil to a roasting tin and heat the tin.

2 Cut the potatoes into large chunks. Bring a large pan of water to the boil and parboil the potatoes for 10 mins, then drain.

3 Add the potatoes to the roasting tin, brush with oil and roast for 1 hour or until golden brown, turning occasionally.

4 Put all the remaining ingredients in a food processor and blitz until well combined.

5 When the potatoes are cooked, pack them tightly into a hot serving bowl before spooning the rarebit mixture evenly over the top. Grill

for 2-3 mins until golden and bubbling. Serve.
