Golden milk bircher

Go for gold with this overnight oats recipe - it's quick, easy and perfect to surprise your family with the next morning!

SERVES 1 READY IN: 15MINS.

What you'll need:

  • 1 tsp coconut oil
  • 1/2 tsp ground turmeric
  • 3 thin slices Co-op root ginger, unpeeled
  • 1 cinnamon stick or 1/4 tsp ground cinnamon
  • 200ml unsweetened almond milk
  • 60g Co-op rolled oats
  • 1 tbsp Co-op 0% fat Greek style natural yogurt, plus a little extra to serve
  • 1 tsp Co-op clear honey
  • 1/2 small Co-op Granny Smith apple, thinly sliced
  • Handful Co-op blackberries

What to do:

  1. In a small saucepan, melt the coconut oil over a low heat
  2. Add the turmeric, ginger slices and cinnamon stick then fry gently for 2-3 mins
  3. Pour in the almond milk, increase the heat and simmer for 2 mins
  4. Put the oats in a mixing bowl or jug, pour the warm milk over them and stir to combine
  5. Leave to cool, then cover and chill in the fridge until morning
  6. To serve the bircher, remove the cinnamon and ginger, stir in the yogurt, honey and most of the apple, then top with a little more yogurt, the rest of the apple and the blackberries
