Cheats’ koftas

Guaranteed to please, these koftas are easy to make and perfect for a quick summer time meal for the family. Paired with a cucumber yogurt to really enhance the flavours, these will go down a treat!

SERVES 4

Ingredients:

200g couscous

275ml boiling water

2 packets of 12 beef meatballs

1 large red pepper, deseeded and cut into chunks

½ red onion, peeled and cut into wedges

3 tbsp olive oil

1 tsp ground cumin

¼ small cucumber, diced

Juice of ½ lemon

1 x 25g packet fresh parsley, chopped (optional)

1 x 25g packet fresh mint, chopped (optional)

To serve, lemon wedges and cucumber yogurt (see tasty twist, below)

Method:

1. Place the couscous in a bowl. Crumble the stock cube into the boiling water and pour over the couscous. Leave to absorb the stock, the fluff up with fork.

2. Meanwhile, thread the meatballs onto eight wooden skewers, alternating with some of the red pepper chunks and all of the red onion. Finely chop the remaining red pepper for the couscous.

3. Mix 1 tbsp oil with the cumin and brush all over the meatballs. Cook under a preheated medium-hot grill for 10-12 minutes, turning frequently.

4. Stir the remaining ingredients into the couscous and serve straight away with the koftas, lemon wedges and cucumber yogurt.
