Breakfast burritos

Make your breakfast burrito-ful 😍 It’s like a fry up… but in a wrap! 😋

INGREDIENTS

  • 100g Co-op spinach
  • 6 slices Co-op chorizo, chopped
  • 2 large eggs from Fairburn's Eggs
  • 2 tbsp Co-op semi-skimmed milk
  • 150g can baked beans
  • 2 Co-op tortillas
  • 3 sundried tomatoes in oil, drained and roughly chopped
  • 2 tbsp hot chilli sauce
  • Serve with a handful rocket (optional)

METHOD

  1. Set a nonstick frying pan over a medium heat and stir fry the spinach for 2-3 mins until wilted
  2. Set aside
  3. Wipe the pan and cook the chorizo for 1 minute, then set aside
  4. Add the eggs and milk to the pan and stir until scrambled
  5. Tip into a bowl and wipe the pan clean again
  6. Meanwhile, heat the beans according to the pack instructions
  7. Heat each tortilla in the pan for 5-10 seconds on each side, then fill with the egg, spinach, chorizo, beans, sundried tomato and chilli sauce
  8. Fold the edge nearest to you over the filling and fold in the sides to make a parcel
  9. Serve with rocket, if you like
