Greek-style pasta salad
Makes: 2 as a main (or 4 as a side)

- Dried pasta shapes
- Co-op mixed olives with feta in a herb dressing
- Cherry tomatoes
- Cook 300g dried pasta shapes (fusilli or penne) in a pan of lightly salted boiling water according to pack instructions until al dente.
- Drain well and run under cold running water.
- Tip into a bowl with a 150g carton Co-op mixed olives with feta in a herb dressing, 250g cherry tomatoes, halved, and ½ cucumber, halved lengthways and thinly sliced.
- Toss until well combined.
- Season with freshly ground black pepper.
