Rocky road pancakes
There's nothing batter than combining your favourite things in a rocky road extravaganza! Chocolate, cookies and marshmallows - what's not to like?
SERVES 2 TAKES 20 minutes
Ingredients
- 40g Co-op milk chocolate (Fairtrade), chopped
- 25g dried cranberries (optional)
- 25g mini marshmallows
- 2 Co-op Irresistible chocolate and hazelnut cookies
Method
- Preheat the oven to 180℃/fan 160℃/Gas 4
- Make 2 pancakes then lay out on a greased baking tray
- Evenly scatter over the chocolate, cranberries and marshmallows, and crumble over the cookies
- Heat in the oven for 4-5 mins, until the chocolate and marshmallows start to melt
