Coconut ice

Cool off from the blistering heat with this yummy easy to prep coconut ice, perfect for hot summer evenings. 

SERVES 6 PREP 10 MINUTES FREEZE 10 HOURS

Ingredients:

  • 400ml tin coconut milk
  • 400ml tin condensed milk
  • Juice and zest of 1 lime
  • 1tsp vanilla essence

Method:

  1. Line a loaf tin with cling film, letting the edges hag over the side. 
  2. Mix together the milks, most of the lime zest, the juice and vanilla essence. 
  3. Pour into the lined tin and freeze overnight. 
  4. Pull the edges of the cling film to remove the coconut ice from the tin.
  5. To serve, sprinkle over the remaining lime zest an slice.
